A special delicacy from Calabar Cross River State in Southern Nigeria. EKPANG NKUKWO is prepared using grated Coco-yam and Water yam wrapped in a Vegetable called NKUKWO in Efik dialect. You add Periwinkles (Mfi in Efik dialect), Fish, your choice Meat, Seasoning and Oil.
